You do need a return or onward ticket to get onto the airplanes or to get into most countries. I do not know of any exceptions in Latin America. It is annoying and limiting but there is a way around it.

You can buy open ended onward tickets without specific dates of departure. They can be open for up to one year but sometimes these tickets are expensive. Once in a while they are cheap. Make sure any tickets buy open ended can be exchanged for a new ticket to the destination you really want.
You only need to buy a ticket to leave the next country, not to get all the way back home.

And in most countries you can buy in advance an onward bus ticket, also open ended and cheap. Cheap enough to throw away. These can often be bought on the Internet.
