I booked my last Argentina vacation with a travel agent who got us the hotel, transfers, international flights, domestic flights (we went to Iguazu, Buenos Aires, and Mendoza) within Argentina, and a few tours. The rest we just paid for ourselves when we got there. If you google travel agent and the area you want to go to (like Peru, Colombia, etc.), you'll find ones that specialize and can book almost everything for you in advance.
